This beautiful pasta comb started off life over 100 years ago as a reed 'pettine' (comb) in an Italian weaving loom.
Originally used to separate and space the warp threads, it was created to weave cloth and tapestries. The construction of each comb comprises of carefully spaced wooden slats made from marsh reeds from the Mirandolese valleys, which are glued and tied with waxed hemp thread, before being secured onto a wooden frame.
These 'pettine per maccherone' were historically present in every Mirandolese household and used by the 'rezdore' or 'woman of the house' to make macaroni / maccheroni.
Today, these original loom combs are recovered by a local carpenter, 'Al Marangoun'. Each delicate comb has been restored and repurposed by hand into kitchen tools. The age, history and restoration process of each comb makes every one unique and different.
Use:
Taking small squares of rolled pasta, place on the comb and using the dowel stick, roll each pasta square into a tube. The fine grooves of the comb leave an imprint on the pasta tubes to give a truly authentic look.
The original 'maccheroni al pettine' from the Mirandola region is rolled straight rather than on the diagonal to create a macarone that does not have pointed tips like those found on garganelli.

Clean gently by brushing away dough and flour with a clean toothbrush. Use a little water if necessary to clean the surface and then leave to dry completely before storing. Not suitable for the dishwasher.
